Game Night Loaded Nachos

Looking for a fun, yummy dinner idea for game night?  How's loaded nachos sound?!  Healthy, tasty, filling, and even your husband will be surprised how good sweet potatoes taste in place of nacho chips! 






Nacho "Chips"​​

  • 1-2 large sweet potatoes

  • Olive Oil

  • Dash of sea salt & pepper​​





  •  2 Chicken breasts

  • 1 tsp extra-virgin olive oil

  • 1/4 tsp chili powder

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder



  • 1 Avocado 

  • Minced garlic

  • Lime juice

  • Dash of sea salt & pepper



  • 1 jalapeño, diced ​

  • Scallions, diced

  • Tomatoes, diced

  • Any other topping that you desire





  • Preheat oven to 375 and line baking sheet with foil

  • Spray baking sheet 

  • Slice sweet potatoes as thin as possible

  • Lay sweet potatoes down and drizzle with olive oil (add dash of salt & pepper)

  • Let sweet potatoes get crisp, then remove and let cool

  • Place sweet potatoes on plate ​​



  • Coat chicken with spices 

  • Drizzle pan with olive oil 

  • Bake in oven at 350 degrees for 30 minutes (or grill chicken)

  • Dice chicken into small pieces


*Top sweet potatoes with chicken, tomatoes, scallions, guacamole, and any other topping of your choice and there you have it...a tasty dinner for the big game!
